- Our Noodles


We specialize in takasuimen style 

noodles which come from the region 

of Kitakata in Japan! Our noodles are 

fresh, never-frozen, hand prepared 

and hand crumpled every day! 

Our takasuimen noodles absorb 

a higher percentage of water and it 

produces a slippery, wavy, chewier 

and softer noodle!

- Our Chashu


We make our chashu by rolling the 

pork belly and braising it at a low 

temperature for several hours.  We 

hand select every pork meat every 

day to ensure the highest quality.  

Always fresh and never frozen! We 

braised it in our soy-based sauce 

along with vegetables to harmonize 


- Our Pork Broth


Our broth is boiled with selected 

pork bones for 14 hours to extract 

all the flavors! We continuously add 

bones to melt into the broth which 

gives it the milky color. We make a 

lighter broth by removing all excess 

fat to give our soup a cleaner 

aftertaste while keeping the deep 

flavor! The broth can be combined 

with miso, shoyu, or shio to add to 

the rich flavor in our bowl!
